A recipe a little more comforting for the days a little colder. An option for lovers of rice pudding but without gluten and lactose.

Ingredients for Gluten and lactose free Banana Rice Pudding

  • 60 g of white rice
  • 600 ml of almond or coconut milk
  • 1 cinnamon stick
  • 2 teaspoons of clover honey
  • 2 tablespoons coconut cream
  • 1 banana
  • Slices of banana and cinnamon powder for dressing

Instructions

  1. Place the rice in a saucepan. Add the almond milk. Dip the cinnamon stick into the almond milk.
  2. Bring to a boil then cook on low heat without covering for 40 minutes
  3. Add honey and cook another 15 minutes
  4. Remove from heat and remove the stick from the vanilla pod
  5. Add the coconut cream and the sliced banana.
  6. Let rest
  7. Mix before filling the ramekins, add a few slices of banana and cinnamon
